Spring is here!

Despite the snowman picture above, Spring is here.  That snowgirl melted quickly, thankfully!  April is one of my favorite times of the year, because we can finally get outdoors and enjoy some fresh air after being stuck in the house all winter.  We've been going for lots of walks!


Leftover bananas in the freezer means banana muffins.  I took a banana bread recipe and substituted the oil with applesauce (left about 1 tbsp of oil in the recipe) and also substitued the milk with almond milk and the sugar with splenda.  Simple substitutions in your favorite recipe can make a low calorie, delicious subsitute.  These muffins were only 107 calories each :). 


Jarrod's 30th Birthday was on April 7th.  Jarrod wanted his favorite cake (yellow cake with peanut butter frosting) and I came up with a healthy version for his birthday.  What I did was made the box cake mix (the sugar free kind) with diet cream soda.  The cake was still very moist and yummy, without using any added calories of oil and eggs.  For the frosting, I made a peanut butter pie filling, substituting the powdered sugar for splenda, milk for almond milk, and using fat free cool whip.  I also shaved some chocolate to make it pretty.  It was delicious!

 We also had a small birthday party the Saturday after Jarrod's birthday, and I put together a nice fruit platter.  Like the pineapple flowers? 



 Last night for dinner I made a taco salad without any meat.  I made some black beans with some sauteed onions, canned corn, salsa, and taco seasoning.  Yum! 

After the birthday week, I was expecting I would have gained weight this week, but I actually lost 1.4 lbs!
