Squint your eyes and look closely, under those green beans are some fiddleheads... no it's not fiddlehead season yet, but I was lucky enough to have family who picked some for me last year and still had some in my freezer! Yum! :) Can't wait for the warmer weather to come along so we can eat some yummy fresh ones! The above meal I made this week... Baked Split Chicken Breast with some Indian Seasoning (Cumin, Curry Powder, Garlic, Basil, salt and pepper), and some Brown Basmati Rice that I cooked in the rice cooker with the same seasonings. Yum! Made enough to have this meal twice.. but with different veggies the next night. On Wednesday, in honor of Ash Wednesday, I took some haddock from the freezer that I bought a couple weeks ago at the fish place. I wasn't sure what I was going to make with it, but headed to Shaws to find something yummy... on my way, I thought of what I had eaten last Wednesday (THAI food with my best friend) and ...

Spring is here!

Despite the snowman picture above, Spring is here. That snowgirl melted quickly, thankfully! April is one of my favorite times of the year, because we can finally get outdoors and enjoy some fresh air after being stuck in the house all winter. We've been going for lots of walks! Leftover bananas in the freezer means banana muffins. I took a banana bread recipe and substituted the oil with applesauce (left about 1 tbsp of oil in the recipe) and also substitued the milk with almond milk and the sugar with splenda. Simple substitutions in your favorite recipe can make a low calorie, delicious subsitute. These muffins were only 107 calories each :). Jarrod's 30th Birthday was on April 7th. Jarrod wanted his favorite cake (yellow cake with peanut butter frosting) and I came up with a healthy version for his birthday. Here We Go Again Trying this blogging thing again as I embark on my new journey with Keto. I should probably just call it low carb, because my goal isn't Ketosis. I just want to eat better in order to lose weight, and most of all feel better. This year has been a bit crazy, health wise. I was diagnosed with Ideopathic Pulmonary Arterial Hypertension in February, after passing out in my bathroom. Yeah, the symptoms had been there since Summer 18. Shortness of breath was the biggest. I couldn't walk a my driveway without stopping to catch my breath, or I would get dizzy/lightheaded. Climbing stairs was almost impossible, I had to stop in the middle at the landing, and catch my breath. I thought I had just gotten too sedentary after starting to work at home. It was embarrassing. I felt tired and fat and lazy. Little did I know, that I actually had something wrong with my lungs that was causing the right side of my hea...
